Tomato Rice

I love tomatoes. I can polish of at least 3 or 4 in a day and in any form- pickled,raw, steamed,roasted,sauce,puree etc,etc.I think I got addicted to it through my mom's tomato rice. It is so simple and easy to prepare. It is also the first item I tried out (apart from traditional dishes) after marriage.I feel mine is ok, though the taste is not that of my mom's.(it is always like that I think.).I also experiment with this rice though I always come back to the original .

Ingredients:
Tomatoes:3 chopped into small pieces
Onions:2 medium chopped into long thin pieces
green chillies: 2 slit
cinnamon,cloves, cardamom,poppy seeds:1/2 tsp each pwdered or as per your taste.
Basmati rice: 1/2 cup cooked
salt: as per taste

Preparation:


Cook rice.Heat oil in a kadai. Add chopped onions and saute. As it turns pink, add slit green chillies and saute. As the onion turns brown, add chopped tomatoes,salt and powdered or crushes cinnamon,cloves,poppy seed, cardamom.Mix well and saute till tomatoes are cooked and juice oozes out. Turn off gas. Mix with rice.Serve with onion raita.

PS1: If the tomatoes are not so juicy or are less in no: add tomato sauce/puree and cook while mixing with rice.
PS2:rather than adding cooked rice,add cleaned rice to the onion tomato masala mixture, either add water/coconut milk/tomato puree and cook in a pressure cooker for 1 whistle.
